Fall is in the air, and we are pretty jazzed about it. With its bold flavors, cozy feels and seasonal festivities, there’s no better time to be a Member at The Commerce Club. As the days become shorter, and weather more brisk, we begin to welcome the magic of the holiday season together. And make no mistake, this year will be special. We will gather in celebration, with purpose and intention – to build leaders, create outstanding experiences and champion our communities.
In the spirit of giving, ClubCorp has opened its doors to the community through the years for our annual Charity Classic, one of the largest golf and dining charity events in the world, collectively raising more than $30 million since its inception. This year, The Commerce Club is honored to support SafeHouse Outreach. On Tuesday, November 30 (Giving Tuesday), we’re uniting once again for our fall Shine Day. Where do you get your inspiration for holiday entertaining?
I often reflect on my travels through Vienna. Everyday seemed like Christmas there, because of the music, all the crowds and all the local businesses were brightly decorated.
Backtrack to when you were a child, what was your favorite thing about the holiday season, and what was a typical holiday meal like growing up?
Being with family during Thanksgiving is by far the most memorable. Our typical meal consisted of a true classic Thanksgiving feast with all the fixin’ and lots of it!
Fast forward to today, how has that changed, and do classic or new recipes prevail?
How I celebrate the holidays has definitely changed, as I am usually working on the holidays. Now, Thanksgiving dinner goes well into late night. Since I’m living outside my home state, there is not nearly as much family present. But now the holidays are filled with more friends who still enjoy the classic dishes!
Favorite Thanksgiving side dish: Wild Rice with Poached Cremini Mushrooms
Secret to your turkey’s success: Brine the turkey under refrigeration for at least 24 hours.
Go-to celebratory wine, beer or spirit: Vodka

Butternut Squash and Sweet Potato Soup

1 butternut squash (about 2 lb)
2 sweet potato (about 200g each)
3 tbsp avocado oil (or other neutral oil)
pinch sea salt
1 white onion (about 200g)
3 cloves garlic
1 tbsp avocado oil (or other neutral oil)
4 cups vegetable broth, plus more if needed
1 tbsp curry powder
1/2 tsp cumin
1/4 tsp paprika
1/4 tsp ginger
1/4 tsp cayenne pepper (optional)
1 can coconut milk (400 ml/14 fl oz. can)
1/3 cup peanuts, for garnish (optional)
Preheat oven to 400F/200C. Peel and chop the butternut squash into small bite-sized cubes. Chop sweet potato into bite-sized cubes. Add veg to a baking dish and drizzle with oil. Sprinkle generously with sea salt and pepper and cook for 30 minutes, or until cooked through.
Dice onion and garlic and add to a large pot with pinch sea salt. Drizzle with 1 tbsp oil and bring to medium-low heat. Simmer on low, until onion turns translucent in color (10 mins). Add roasted squash and sweet potato and pour in vegetable broth. Bring to simmer and add spices: curry powder, cumin, paprika, ginger, and cayenne.
Cook for another 10-20 minutes. Puree soup with a hand mixer, or transfer to blender to puree in batches. (Optional to add splashes more broth if needed for blending if it's too thick, but I didn't need to). Pour canned coconut milk into pureed soup to finish, stir to combine.
In a skillet toast peanuts on medium-high heat until browned and fragrant (approx. 5 minutes). Make kale chips for garnish (recipe link in notes. Takes 5 minutes).
Pour soup into bowls and top with roasted peanuts and kale chips. Season with sea salt and pepper.
